Deus Ex is a really good game; definitely one of my all-time favourites. You play as an nano-augmented agent called JC Denton who gets involved in conspiracies, government work and many other missions. All the levels are open-ended, meaning you can choose your own path (within limits). You can acquire skill points in the game by accomplishing feats, and use them to upgrade your character, which thus allow you to improve your skill level with things such as pistols, melee weapons, hacking and lock-picking. You can talk to a lot of NPC's and choose what to say, and also complete side-missions fo them if you wish to do so.

The game is one of the few that is set in a Cyberpunk world (think Bladerunner style) and has an impressive, interesting and intelligent storyline. The game was made a long time ago, so don't expect amazing graphics or whatever, but do expect a great time playing it. As for removing the HUD, I've only played it on PS2 (which has a more simple interface), so I'm not sure. The PS2 version lacks some of the gameplay areas and has loading times, but is more recent and has an improved HUD, so choose based on personal preference. The story levels will take you to places like Paris, Hong Kong, New York and Area 51.

Hope this helps! Oh, and the new one is appearing in the near future, so look out for it if you like the first one.
